Balkan Bites

Balkan Bites makes frozen burek, the savory stuffed phyllo swirl that is an everyday food across the Balkans, along with a newer line of bite-size phyllo rolls. The phyllo is made from scratch with unbleached flour, extra-virgin olive oil and real butter, then filled with spinach and cheese, a ricotta and feta blend, or seasoned beef and onion. The female and family owned company was started by Ariana Tolka and her aunt, chef Alida Malushi, who began baking her late grandmother's Albanian recipes together on Sundays before debuting them at New York City markets.
