About Ithaca Hummus
Founded by Chris Kirby
Ithaca makes chilled hummus in flavors like Lemon Dill, Lemon Beet, Jalapeño Lime and French Onion, plus a line made with 100% extra virgin olive oil. It is whipped cold in small batches and kept fresh with high pressure processing instead of artificial preservatives. Chris Kirby founded the brand in 2013 and started out selling hummus at the Ithaca farmers market.

Answered by Ithaca Hummus.
Does Ithaca Hummus use artificial preservatives?
The brand aims to avoid preservatives like potassium sorbate and sodium benzoate, using high pressure processing (HPP) instead to keep the hummus safe and fresh.
What is high pressure processing?
A cold pasteurization method where sealed tubs are put under intense water pressure, keeping the hummus safe without heat treatment.
What are the red specks in the hummus?
Crushed red pepper, which is listed in the ingredients of every flavor.
Why does the hummus sometimes separate?
It contains no stabilizers, binders or emulsifiers, so slight separation can happen. Just stir it.
What oil is used?
The core flavors use expeller pressed high oleic sunflower oil. Three flavors, Classic, Roasted Red Pepper and Olive Oil Sea Salt, use 100% extra virgin olive oil.
Does the hummus contain allergens?
It contains tahini (sesame). It does not contain eggs, milk, peanuts, tree nuts, shellfish, fish, soy or wheat.
Are the containers recyclable?
Yes. Tubs and lids are BPA-free polypropylene (PP5), recyclable, reusable and dishwasher safe.
