Founded by Lex Evan
LEXINGTON BAKES, also known as LEX BAKES, makes soft-baked protein cookies, protein oat bars and fudgy dessert brownies. The treats use mostly organic ingredients and fair trade sugar, cacao and vanilla, and skip artificial flavors, sugar alcohols, soy, gums and corn syrups. The brand names its ingredient partners, such as Raaka and TCHO chocolate and Straus Family Creamery butter. Founder Lex Evan taught herself to bake from scratch after struggling to find treats that were both delicious and made with ingredients she trusted.
